I knew the moment I saw this picture, that I had to try this dessert.
Julie, from the Alkaline Sisters created a beautiful and healthy dessert that just looked a treat! A glance over the ingredients and I knew her Raw Coconut Cream Pie was something special.
I tried my absolute best to follow the recipe to a tee. However, my one compromise was using just raspberries for my berries as strawberries are quite scarce in Vanuatu.

My verdict? I’m not much of a sweet tooth, but both my husband and I agreed that it wasn’t very sweet. On went some maple syrup as a topping. Sweet tooth satisfied. My filling didn’t go as creamy as theirs and mine wasn’t perfectly white, I’m not sure why? Considering all things, this recipe is definitely a great base recipe for other exciting healthy desserts. Perhaps if I get a better blender where the filling would blend perfectly smooth I would definitely consider making this recipe again and making some adjustments to the sweetness.
The base held together beautifully, although my tin was a little large so I wasn’t able to make my crust as thick as Julie’s or build the pie’s walls. Ah yes, that is a zucchini! I was rather impressed as to how well it blended into the dish. I’ll keep that in mind for when I grow some of my own, as that little imported stubby green finger cost me $3 (yes, for one)! Island life sometimes has its downfalls – often around the cost of non-local items.
Speaking of the price of fish, coconuts and raspberries are cheaper than chips here! I can buy half a dozen small young coconuts for less than $2. An extra large punnet of raspberries will set me back around $3. (Did I mention they’re organic?)

I’m a big fan of Julie and Yvonne. As a blogger I know the time and energy that goes into a post. Looking at their blog, I know there is so much of them personally invested in sharing their healthy recipes with beautifully presented photos and key information about the ingredients they’re using. Their food is quality. And if you are what you eat… then, on my, so are they!
