Cabbage. Cucumber. Carrots.
Sometimes things just don’t need to be complicated. So today, I’m keeping it real simple. Three ingredients (plus dressing), and you can have a lovely, vibrant and healthy salad to accompany your next oriental feast.
Recipe
⌲ Grated Carrot
⌲ Sliced Cucumber
⌲ Finely sliced Purple Cabbage
(all equal quantities)
Dressing (enough if using 1 med size carrot as a guide):
⌲ 3/4 tbs rice vinegar
⌲ 1 tbs pure sesame oil
⌲ 1 tsp soy sauce
⌲ 1/2 tbs lime juice
⌲ 1/2 fresh ginger juice (grate and squeeze juice)
Mix salad ingredients in a bowl. Mix all the ingredients for the dressing and pour over the salad. Gently mix the salad so that the dressing is throughout the entire salad. The acidity in the dressing will “cook” the salad as Chinese cuisine rarely has “fresh” vegetables.
