Roasted Thai Mushroom Salsa - Recipe

Sometimes I think this blog should be called, ‘What my mum made’. Because really, she is the cook behind so many of the dishes I know and love to cook. Today she’s done it again, she’s created something I can almost only call ‘flavour’. It is so delicious, freakishly delicious! If you have mushrooms in the kitchen, chances are you’re going to have everything else you need to make this right now!

Roasted Thai Mushroom Salsa - serve with rice

Grilled Thai Mushroom Salsa – Recipe

2 Medium Tomatoes
3-4 Garlic Cloves
1/2 Onion (your favourite variety)
4 Large Mushrooms
1-2 Fresh Chillies
1/2 tsp Salt
1/2 Small Lemon (juice)
Coriander (the more the merrier)

Cut mushrooms, tomatoes and onion in slices and place on baking tray. Place garlic cloves on tray as well. Grill for 10-15 minutes. Once cooled, add the grilled veggies and the remaining ingredients into a food processors and use the pulse function.
Serve with rice!

Is the recipe for the juice of 1/2 a lemon or does the whole thing, rind and all go in?

Mmm, that looks great. I finally have some mushrooms in my fridge to use up and this looks yummy!

I made this for a potluck and it was a total hit! Everyone requested for the recipe and they asked me if where did I get this idea. I never thought that they will like it. I duplicated all and took also some pictures.

In a large skillet, place tomatillos flesh side down after being cut in half , poblano pepper quarters, garlic cloves and onion.
